Mid-afternoon is a tough time. I usually start dragging around 3:00 and start looking for a pick-me-up to help me get through the afternoon. Sometimes that pick-me-up is a real treat like a cookie. But lately it’s been this smoothie. The sweetness makes it feel like a treat, but it’s packed with good stuff that gives me energy. It’s also cool and refreshing, which is crucial in Atlanta in June.
Did I mention I got married? Well, last month Austin and I tied the knot! I hope to share some pictures soon. One great thing about getting married is you get some new kitchen, dining, and entertaining things to play with. I’ve been having a lot of fun with some of these new gadgets. To make this smoothie, I used our new Vitamix–a very generous gifts from my siblings.
If you don’t have a Vitamix, no problem. I’ve made this smoothie using an emersion blender and a big bowl before. Any kind of blender will work just fine.
Start with about a half a cup of water. Add a little more or a little less depending on how thick you want your smoothie. Add your fruit. Right now berries are in season, meaning they’re more affordable and more delicious. You can use frozen berries too. For this I used a bag of frozen mixed berries. I also like to use bananas that I’ve frozen. Using frozen fruit means you don’t have to add ice. It chills the smoothie down and keeps it nice and creamy. Throw in a tablespoon of rolled oats, a tablespoon of almond butter, a tablespoon of sliced almonds, and a date or two. Really you can just eyeball all this. I also add a scoop of protein powder (such as this one) to mine. A little extra protein makes it more substantial and helps me power through the rest of the afternoon. But totally optional. Blend it all together until smooth. To make it a little more treat-like, garnish with some beautiful fresh berries.
- ½ cup water
- ¾ cup berries (fresh or frozen)
- ½ medium banana
- 1 date
- 1 tablespoon almond butter
- 1 tablespoon rolled oats
- 1 tablespoon sliced almonds
- 1 scoop protein powder (optional)
- Combine all ingredients in a blender and blend until smooth.
