I’m currently in the midst of final exams, so it’s a busy time of year for me. I thought I would share some of my favorite quick, easy, and healthy weeknight meals. These four dishes have been in heavy rotation lately.
I love to make Real Simple’s Tilapia Salad with Apples and Almonds on a Sunday or Monday night after an over-indulgent weekend. Here I used walnuts instead of almonds and spinach instead of baby arugula because that’s what I had on hand. This Chicken, Squash, and Chickpea Salad with Tahini Dressing (also from Real Simple) is another favorite. I skip the pita chips and chickpeas and add nuts. The tahini dressing is life changing.
This Healthy Mexican Casserole with Roasted Corn and Peppers from Pinch of Yum is like a delicious Mexican lasagna. It’s great to make on a Sunday night because you can get quite a few meals out of it. It feeds Austin and I for several nights (these are leftovers he never complains about!), and is also great packed up and reheated for lunch. I’ve added ground beef or chorizo before when serving it to meat lovers.
The best thing about Giada’s Balsamic-Glazed Salmon is that it is super fast. When I’m questioning whether I even have time to cook (and thinking about ordering in), I remember I can make something healthier in half an hour. Here I used peas in my freezer so I used them instead of edamame.
I discovered this Braised Coconut Spinach and Chickpeas with Lemon when I did the Kitchn’s cooking school last year. It’s healthy but also so comforting served over a roasted sweet potato (sweet potatoes have to be one of my top comfort foods).
Roast chicken – I usually adapt this simple version. Another great dish for a Sunday night. I usually serve it with roasted vegetables. Use the leftover chicken throughout the week in salads and sandwiches.
